Tonight I decided to take another day off from running to allow my knees and ankles more time to recover. I am still feeling slight pain even after resting this past week.. So instead of running I completed the Daily Burn - Yoga 1: Surya A routine and got my stretch on. View a segment from this video HERE.

In order to relax and enjoy this yoga routine fully..I did not wear my heart rate monitor. So I won't have a photo of it to share with you guys tonight.

Twelve Days of Fitness Challenge | Day Seven

So here we are at the close of 2013 and as I look back through my photos from this past year, to my travels, to drinks with friends, to girls nights, to date nights with my sexy husband, to family gatherings filled with love and laughter, I am filled with peace and gratitude. Though not everyone I made memories with will be making the leap into the new year with me, I am still honored to have spent whatever amount of time with them I was able to. Everything has its own time. That is one of the many lessons I will be bringing with me into 2014. 

Happy New Year, to you all, whoever you are, wherever you are!

Day 7 and last workout of 2013! WOOT!!

Tonight I ran then completed a 15 minute "Quick Core" session through Fitness on Demand by Daily Burn! Check out a segment from this workout HERE.

While running I began feeling shooting pain in my left ankle and in both shins.. so I listened to my body and cut my run short. I have a hunch that I have been overdoing it by putting in an intense leg workout on non run days, so tomorrow I plan to give my legs a break and only work on upper body in order to avoid possible injury or muscle strain. I don't need to be out of commission for an extended amount of time for pushing my body too hard too fast. No way! I have had to do that once before and I absolutely hated it. 

My advice to anyone training hard is to make sure you are paying close attention to your body. If you feel any sort of pain or extreme discomfort, you may need to back off a bit. It's certainly better to be safe than sorry!

So.. since I hate being behind, I asked Catherine of Fit Armadillo if I could combine workouts to get caught up with the challenge and lucky for me she said sure, as long as this is a one time thing of course! She is awesome. You really need to go check out her blog and join our challenge if you aren't already participating. All of the ladies involved are so supportive of one another and make this entire experience so gratifying, so a BIG thank you to Catherine and ALL of the ladies who are participating in this challenge, you are all so amazing and I am so glad I decided to join.

Tonight I focused on legs and upper body! 

Since I loved the routine so much I went ahead and began with Lethal Legs, and I must make a correction, on Day Three's post I said this routine was eleven to fifteen minutes long.. I fibbed. It is actually just over 30 minutes long. I honestly loved this routine more tonight than I did the first night I tried it. Why? Because it is just as challenging the second go-round, if not more due to already sore muscles. And I don't know about you, but I LOVE being sore from a good workout, it lets me know that I am doing it right. :)

To end the night I worked on my arms, using the Fitness on Demand program Strength - Push which is a few seconds shy of 35 minutes. Check out a segment from this video HERE! Boy oh boy.. I felt that one. :)

Super Simple Spaghetti Squash

Here is a little factoid about me: A year ago hubby and I ditched meat and went vegetarian for several months! While doing so we also dove head first into juicing, after watching the documentary Fat Sick and Nearly Dead (check out the website HERE). Though we both decided that being completely meat-free isn't right for us, we didn't come away from the experience empty handed! I now know so much more about nutrition, health and animal welfare than I did 2 years ago, and to me that is great!

While being a meat-free-juice-head, I stumbled upon so many wonderful people like Kristina Carrillo-Bucaram of Rawfully Organic, Megan Elizabeth and one we all remember from the 90's classic Clueless, Alicia Silverstone who is the founder of The Kind Life and author of the amazing book The Kind Diet and soon-to-be The Kind Mama. Congratulation Alicia, on the new book and becoming a mama! :)

I also found out about so many delicious vegetable substitutes for pasta and rice, and one of them was spaghetti squash! I never got around to trying it for one reason or another so last week I decided to give in and try spaghetti squash. I did what everyone does when they are trying something new these days, I scoured the interwebz for recipes, tips and anything that would help me prepare this strange vegetable the proper way. After finding so many complicated recipes, I ditched all that and called my mom! :)

So this post is dedicated to you mom, thank you for your help, I love you!

1. First you want to pop your spaghetti squash into the microwave for 4-10 minutes depending on the size. Yep, the whole thing, just pop it on in there. You will need to do this to soften the darn thing, or else you wont be able to cut it, unless you have a jackhammer! 

2. Once that is finished, start by cutting off the ends, then slice length wise. I got hubby to do it for me because the sucker is tough to cut through. You may not need help depending on how long you put your squash in the microwave. 



3. Next you will need to scoop out the guts.. I used an ice cream scoop and you know.. it worked great! But, feel free to use whatever you wish. :)




4. Once you have scooped out all the goop, place both halves "face-down" in a baking dish.


5. Fill the baking dish half way with water.



6. Bake in the middle of the over for 45 minutes - 1 hour, depending on the size of your squash. For small/medium squash 45 minutes should work fine, for medium/large squash an hour should do the trick! 

7. Once your squash is baked to perfection, in other words you can effortlessly stick a fork or a knife though the whole thing.. You will need to take the squash out of the dish and lay it flat on a plate. Begin scooping out the innards with a fork, and this is where you will start getting the spaghetti! Think of it like scooping out a baked potato!


8. Place the scooped spaghetti squash onto a plate, and add salt and pepper if you wish.


9. Top with your favorite spaghetti sauce, I used meat sauce here! I will have to post a recipe for my homemade spaghetti sauce, it is so good. :)


Then you are ready to eat!

If you are a runner you have possibly heard, or read, the phrase "you will have your good runs and your bad runs". Well folks, tonight I had a bad run. I fought tooth and nail tonight.. It took me almost 36 minutes to run 3 miles. I even stopped to walk at least 3 different times. BUT I got it done, and to me that is all that matters! :)

Lovely Sparkley Snow


Hello all! :) Hubby was off work today so we decided to go ahead and take a rest day. One of the downsides to him working in Wyoming is that he is on call EVERY SINGLE DAY that he is here, so we thought it'd be best to take advantage of this day off and enjoy some quality time together. But don't worry loves, I will pick back up with the Twelve Days of Fitness | Day Four tomorrow.. So stay tuned for that! :D

This afternoon it began sleeting.. then BAM, it was full on snowing outside. I don't know about you, but I absolutely LOVE the snow. To me,  there is just something so magical and enchanting about snow.. It definitely brings out my inner child and everyone seems to perk up when snow is falling all around. Maybe it's because I am from Texas and we get zero snow, accept for the rare occurrence every few years? I dunno.. But I seriously love it when it snows. :) 

The best part about the snow today, for me, was after the sun had already set and it was dark outside. Where ever we went, the way the lights hit the snow, everything sparkled! It was like we were walking on glitter, or thousands upon thousands of diamonds. EVERYTING that was covered in snow sparkled. It was something I have never seen before and it was beyond beautiful. 

Sigh

I think I could possibly maybe live here..
